Healthy Cooking Classes

Our healthy cooking classes are offered as a collaboration between Cornell Cooperative Extension of Ulster County and Ellenville Regional Hospital. Our goal is to improve the health of Ulster County residents by teaching easy, cheap, and healthy home cooking. This winter, there will be a focus on comforting, nourishing one-pot meals and other dishes that are easy to prep and clean-up. At present, all classes are virtual and easy to attend from home and if you want to, you can even cook along!

Excited to learn a new recipe? For November's free and virtual cooking class, we will be making a quick and hearty Chili. Chili is cheap and healthy, and a comforting meal on a cold fall or winter night. This is a great recipe for a family dinner, or to make and set aside for easy meals throughout the week. If you want to cook along with the class at home, you will need:

  • 1⁄2 pound lean ground meat
  • 1 medium onion
  • 1 can (15 ounces) kidney beans
  • 2 cans (14.5 ounces each) diced tomatoes
  • Chili powder
  • 1 carrot (optional)
  • 1 bell pepper (optional)

Curried Squash Soup

What can I cook with all those beautiful winter squashes? For December's free and virtual cooking class, we will be making a warming and comforting Curried Squash Soup. This meal is cheap, healthy, and delicious. This is a great recipe for a family dinner, or to make and set aside for quick meals throughout the week. If you want to cook along at home you will need:

  • 1 butternut squash /other winter squash
  • 1 teaspoon olive oil
  • 1 medium onion
  • 1 green bell pepper
  • 3 cloves garlic
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • ½ teaspoon cayenne pepper
  • 13½ ounces light coconut milk
  • Sour cream (optional)
  • Scallions (optional)
  • Cilantro (optional)
